- 6 ounce short pasta
- 5 ounce fresh spinach
- 1 cup Monterey Jack or cheddar cheese (shredded)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
Instructions
- Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium heat. Add the diced yellow onion and cook until softened, about 3-5 minutes.
- Stir in 2 minced garlic cloves and 1 pound cooked pork sausage crumbles. Cook for 2-3 minutes, just to heat through and meld flavors.
- Pour in 1 (14.5-ounce) can diced tomatoes (undrained), 2 cups chicken broth, and 1/2 cup water. Bring the mixture to a boil.
- Add 6 ounces short pasta to the pot, stirring well. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
- Stir in 5 ounces fresh spinach until wilted, about 1-2 minutes. Remove from heat and stir in 1 cup shredded Monterey Jack or cheddar cheese until melted and creamy. Season with salt and black pepper to taste. Serve hot.

Any pre-cooked sausage can be used here, like Italian sausage or smoked sausage.
