Ingredients
- 14 ounce extra-firm tofu (pressed and sliced into 8 cutlets)
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 0.5 teaspoon garlic powder
- 0.25 teaspoon black pepper
- 1 can crushed tomatoes
- 1 cup shredded mozzarella cheese
- 8 ounce fresh asparagus (trimmed)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Arrange the tofu cutlets in the prepared baking dish. Drizzle with olive oil, then season with oregano, garlic powder, and black pepper.
- Pour the crushed tomatoes evenly over the tofu. Bake for 20 minutes.
- Remove from oven, sprinkle shredded mozzarella cheese over the tofu, and add the trimmed fresh asparagus to the baking dish. Bake for another 15 minutes, or until the cheese is bubbly and golden, and the asparagus is tender-crisp.
- Serve hot.
