  1. Preheat oven to 375°F (190°C) or prepare a microwave-safe plate.
  2. In a small skillet, cook the lean ground beef over medium-high heat, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
  3. Stir in the taco seasoning and 2 tablespoons of water. Cook for 1-2 minutes until the liquid has evaporated.
  4. On an oven-safe plate or baking sheet (or microwave-safe plate), spread the tortilla chips in an even layer.
  5. Sprinkle the seasoned ground beef, rinsed and drained canned black beans, and shredded cheddar cheese over the chips. Add pickled jalapeños and thinly sliced red onion if desired.
  6. Bake in the preheated oven for 5-8 minutes, or microwave for 1-2 minutes, until the cheese is melted and bubbly.
  7. Serve immediately with a drizzle of hot sauce, if you like.
