- 1 tablespoon olive oil
- 1 pound ground beef
- 1 yellow onion (chopped)
- 2 clove garlic (minced)
- 1 red bell pepper (chopped)
- 15 ounce diced tomatoes (undrained)
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1.5 cup beef broth
- 1 cup white rice
- 1 cup cheddar cheese
Instructions
- Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add 1 pound lean ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add 1 each chopped yellow onion, 2 cloves minced garlic, and 1 each chopped red bell pepper to the skillet. Cook for 5 minutes until vegetables begin to soften.
- Stir in 1 can undrained diced tomatoes, 1 tablespoon chili powder, 1 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Pour in 1 1/2 cups beef broth and add 1 cup uncooked white rice. Stir well, bring to a simmer, then reduce heat to low, cover, and cook for 15-18 minutes, or until rice is tender and liquid is absorbed.
- Remove from heat. Sprinkle with 1 cup shredded cheddar cheese, cover, and let stand for 5 minutes, or until cheese is melted. Serve warm.
