  1. In a medium bowl, combine the shredded cooked chicken, chili powder, ground cumin, and salt. Stir to combine.
  2. Heat 1 tablespoon of olive oil in a large skillet or griddle over medium heat.
  3. Place one tortilla in the skillet. Sprinkle half a cup of shredded Monterey Jack cheese evenly over one side of the tortilla. Distribute about 1/2 cup of the seasoned chicken over the cheese. Top with another 1/2 cup of shredded Monterey Jack cheese.
  4. Place another tortilla on top. Cook for 3-4 minutes per side, or until the tortillas are golden brown and crispy, and the cheese is melted and bubbly. Repeat with remaining ingredients to make 4 quesadillas.
  5. While quesadillas cook, combine rinsed and drained black beans and thawed corn in a small bowl for the side. If desired, warm the bean and corn mixture slightly.
  6. Slice each quesadilla into wedges. Serve immediately with the black beans and corn on the side. For picky eaters, serve quesadilla components separately for assembly at the table.

Notes

Using pre-cooked shredded chicken (like rotisserie chicken) will save significant time for this recipe. You can customize fillings with other preferred vegetables, just ensure they are finely diced and cook quickly.
