Instructions
- Preheat oven to 400°F (200°C). Arrange bell pepper halves cut-side up on a baking sheet. In a small bowl, whisk together 2 tablespoons olive oil and 1 tablespoon white wine vinegar; season with salt and pepper. Toss mixed greens with dressing.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef, chopping it up with a spoon. Cook for 5-7 minutes until browned. Drain any excess fat. Add chopped yellow onion and cook for 3-4 minutes until softened.
- Stir in minced garlic, canned diced tomatoes, dried oregano, ground cumin, salt, and black pepper. Cook for 2-3 minutes, stirring, until the mixture is fragrant and slightly thickened. Stir in 1/2 cup of the shredded sharp cheddar cheese.
- Spoon the beef mixture evenly into the bell pepper halves. Sprinkle the remaining 1/2 cup shredded sharp cheddar cheese over the stuffed peppers. Bake for 10-15 minutes, or until the peppers are slightly tender and the cheese is melted and bubbly.
- Serve the cheesy beef stuffed bell peppers immediately with the prepared side salad.
