Ingredients
- 1 pound ground beef (80/20 lean)
- 1 tablespoon taco seasoning mix
- 0.25 cup water
- 10 flour tortillas (small or medium)
- 2 cup cheddar cheese blend (shredded)
- 15 ounce black beans (rinsed and drained)
- 1 package tortilla chips (for serving)
Instructions
- In a large skillet, cook the 1 pound ground beef over medium-high heat, breaking it apart, until browned and cooked through, about 6-8 minutes. Drain any excess fat.
- Stir in the 1 tablespoon taco seasoning mix and 1/4 cup water. Simmer for 2-3 minutes, stirring, until liquid is absorbed.
- For each melt, place one of the 10 flour tortillas in a clean, dry skillet over medium heat. Sprinkle about 1/4 cup of the 2 cups shredded cheddar cheese blend on half of the tortilla, then add a spoonful of the seasoned ground beef. Fold the other half of the tortilla over the filling.
- Cook for 2-3 minutes per side, until the tortilla is golden brown and crispy and the cheese is melted. Repeat with remaining tortillas, beef, and cheese.
- While cooking the melts, warm the 1 can black beans on the stovetop or microwave. Serve the cheesy beef melts with the warmed black beans and tortilla chips.
Notes
If desired, add a sprinkle of finely diced onion or jalapeño to the beef filling before cooking. These melts are great for using up leftover ground beef.
