Instructions
- In a large, oven-safe skillet or Dutch oven, brown 1 pound ground beef over medium-high heat, breaking it apart with a spoon, until no longer pink. Drain any excess fat.
- Add 1 diced yellow onion, 1 diced green bell pepper, and 2 minced garlic cloves to the skillet with the beef. Cook, stirring occasionally, until vegetables are softened, about 5-7 minutes.
- Stir in 1 tablespoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon dried oregano, 3/4 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant.
- Pour in 1 can undrained diced tomatoes and 2 cups beef broth. Stir in 1 cup uncooked white rice. Bring mixture to a simmer.
- Reduce heat to low, cover the skillet, and cook for 15-18 minutes, or until rice is tender and most liquid has been absorbed.
- Remove from heat, sprinkle with 1 cup shredded cheddar cheese, and cover again for 2-3 minutes, allowing cheese to melt. Garnish with 1/4 cup chopped fresh parsley, if desired, before serving.
Notes
This meal is easily customizable with other vegetables like corn or carrots. For extra heat, add a pinch of red pepper flakes with the spices.
