Cheesy Beef and Rice Skillet

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
  2. Add the diced yellow onion and minced garlic to the skillet. Cook for 3-4 minutes, until the onion softens and becomes translucent.
  3. Stir in the tomato sauce, minute rice, beef broth, dried oregano, and ground cumin. Bring to a simmer, then reduce heat to low, cover, and cook for 5 minutes, or until rice is tender.
  4. Stir in the frozen peas. Taste and season with salt and black pepper as needed.
  5. Sprinkle the shredded cheddar cheese over the top of the skillet. Cover and cook for another 2-3 minutes, or until the cheese is melted and bubbly. Serve hot.

Notes

If you don't have minute rice, regular long-grain white rice can be used, but cook time will increase to about 15-20 minutes, with additional broth if needed.
