Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 yellow onion (medium, diced)
- 2 clove garlic (minced)
- 15 ounce tomato sauce
- 1 cup minute rice (uncooked)
- 1.5 cup beef broth
- 1 teaspoon dried oregano
- 0.5 teaspoon ground cumin
- 0.5 cup frozen peas
- 1 cup cheddar cheese (shredded)
- 1 teaspoon salt
- 0.5 teaspoon black pepper (freshly ground)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
- Add the diced yellow onion and minced garlic to the skillet. Cook for 3-4 minutes, until the onion softens and becomes translucent.
- Stir in the tomato sauce, minute rice, beef broth, dried oregano, and ground cumin. Bring to a simmer, then reduce heat to low, cover, and cook for 5 minutes, or until rice is tender.
- Stir in the frozen peas. Taste and season with salt and black pepper as needed.
- Sprinkle the shredded cheddar cheese over the top of the skillet. Cover and cook for another 2-3 minutes, or until the cheese is melted and bubbly. Serve hot.
Notes
If you don't have minute rice, regular long-grain white rice can be used, but cook time will increase to about 15-20 minutes, with additional broth if needed.
