Ingredients
- 2 flour tortillas (6-inch)
- 0.5 cup shredded Monterey Jack cheese
- 0.5 avocado (small)
- 1 tablespoon red onion (chopped)
- 1 tablespoon fresh cilantro (chopped)
- 1 teaspoon lime juice
- 0.125 teaspoon salt
- 0.25 teaspoon black pepper (ground)
- 1 teaspoon vegetable oil
- 2 tablespoon salsa
Instructions
- To make guacamole, in a small bowl, mash 1/2 small avocado. Stir in 1 tablespoon chopped red onion, 1 tablespoon chopped fresh cilantro, 1 teaspoon lime juice, and 1/8 teaspoon salt. Mix well. Set aside.
- Heat 1 teaspoon vegetable oil in a non-stick skillet over medium heat.
- Place one flour tortilla in the hot skillet. Sprinkle 1/2 cup shredded Monterey Jack cheese evenly over the tortilla.
- Place the second flour tortilla on top. Cook for 2-3 minutes per side, or until the tortillas are golden brown and crispy, and the cheese is melted and bubbly.
- Remove the quesadilla from the skillet, cut into wedges, and serve immediately with the fresh guacamole and salsa, if desired.
Notes
You can add cooked, shredded chicken or turkey if you want to include a protein beyond cheese. Adjust seasoning in guacamole to your preference.
