Ingredients
- 2.5 pound pork chop (boneless, center-cut)
- 1.5 pound green beans (trimmed)
- 8 ounce cremini mushrooms (halved)
- 3 tablespoon olive oil (extra virgin)
- 4 clove garlic (minced)
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano

Instructions
- Preheat your oven to 425°F and line a large rimmed baking sheet with parchment paper.
- In a large bowl, toss the trimmed green beans and halved mushrooms with 2 tablespoons of olive oil, minced garlic, 1/2 teaspoon of kosher salt, and 1/4 teaspoon of black pepper. Spread across two-thirds of the baking sheet.
- Rub the pork chops with the remaining 1 tablespoon of olive oil, smoked paprika, dried oregano, remaining 1 teaspoon kosher salt, and remaining 1/4 teaspoon black pepper. Place pork chops on the remaining space of the baking sheet.
- Roast for 16 to 18 minutes until the pork chops reach an internal temperature of 145°F and the green beans are tender-crisp and blistered.
- Let the pork chops rest for 5 minutes before serving alongside the roasted green beans and mushrooms.
