Instructions

  1. In a medium saucepan, combine white rice with 2 cups of water and 1/4 teaspoon of the salt. Bring to a boil over high heat, cover with a tight-fitting lid, reduce heat to low, and simmer for 15 minutes until tender and liquid is absorbed.
  2. Season chicken breast cutlets evenly on both sides with dried oregano, garlic powder, black pepper, and 1/2 teaspoon of the salt.
  3. Heat 1/2 tablespoon of the olive oil in a large nonstick skillet over medium-high heat. Add chicken cutlets and sear for 4 to 5 minutes per side until golden brown and cooked to an internal temperature of 165°F. Transfer chicken to a warm plate.
  4. In the same skillet, heat remaining 1/2 tablespoon of olive oil over medium-high heat. Add sliced poblano pepper and red bell pepper, sautéing for 4 minutes until tender and charred along edges.
  5. Stir black beans and remaining 1/4 teaspoon of salt into the skillet with the peppers, cooking for 2 minutes until heated through.
  6. Divide cooked white rice, charred peppers and black beans, and seared chicken cutlets evenly across plates, serving with fresh lime wedges on the side.
