Ingredients
- 1.25 pound ground turkey (99% fat-free)
- 6 cup broccoli florets (fresh, chopped small)
- 1 tablespoon olive oil
- 4 cup baby spinach (fresh)
- 1 teaspoon Italian seasoning (dried)
- 1 teaspoon garlic powder
- 0.5 teaspoon kosher salt
- 1 lemon (cut into wedges)
Instructions
- Heat half the olive oil (1/2 tablespoon) in a large cast-iron skillet over high heat. Add chopped broccoli florets and cook without stirring for 3 minutes to achieve a light char, then toss and cook 3 minutes more until tender-crisp. Transfer to bowls.
- In the same skillet over medium-high heat, add the remaining 1/2 tablespoon olive oil and the ground turkey. Cook for 5 to 6 minutes until browned and cooked through to 165°F.
- Stir in Italian seasoning, garlic powder, and kosher salt. Add the fresh baby spinach, stirring for 1 to 2 minutes until just wilted.
- Spoon the seasoned turkey and spinach mixture over the charred broccoli in the bowls and serve with fresh lemon wedges for squeezing.
