- 1 yellow onion (medium, chopped)

- 1 can diced tomatoes (undrained)
- 1 can chickpeas (rinsed and drained)
- 0.5 cup beef broth
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1.5 cup white rice (uncooked)
- 2 tablespoon fresh parsley (chopped)
Instructions
- Prepare the white rice according to package directions, using a microwave rice cooker for a quicker option so it's ready for serving.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 6-8 minutes. Drain any excess fat.
- Add the chopped yellow onion to the skillet and cook until softened, about 3-4 minutes.
- Stir in the minced garlic, ground cumin, ground coriander, smoked paprika, and optional cayenne pepper. Cook for 1 minute until fragrant.
- Add the diced tomatoes, rinsed and drained chickpeas, and beef broth. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Bring to a simmer, then reduce heat to medium-low and cook for 5-7 minutes, stirring occasionally, until the sauce slightly thickens.
- Taste and adjust seasonings as needed. Serve the Central Asian Spiced Beef & Chickpea Skillet hot over the steamed white rice, garnished with fresh parsley if desired.
Notes
