Cast Iron Poblano Steak Strips

  1. Place diced baby red potatoes in a microwave-safe bowl with 2 tablespoons water, cover, and microwave for 4 minutes to partially steam; drain.
  2. Toss the sirloin strips with smoked paprika, black pepper, and half of the kosher salt.
  3. Heat half the olive oil in a 12-inch cast iron skillet over high heat. Add the steak strips and sear undisturbed for 2 minutes, then toss for 1 minute more until nicely browned. Transfer to a plate to rest.
  4. Add the remaining olive oil to the cast iron skillet over medium heat. Add the partially cooked potatoes, sliced poblano peppers, sliced yellow onion, and remaining kosher salt. Cook for 8 to 10 minutes, stirring occasionally, until the potatoes are golden and tender and the peppers are charred at the edges.
  5. Add the minced garlic and sauté for 1 minute until fragrant.
  6. Return the steak and resting juices to the skillet, stirring everything together for 1 minute to reheat.
  7. Divide the steak, roasted poblanos, and crispy potatoes evenly across 5 plates.

Notes

Pre-steaming the potatoes ensures they turn crispy on the outside while staying tender within.
