Carne Guisada with White Rice and Habichuelas Rosadas

  1. Season beef chuck cubes with 1/2 teaspoon salt and black pepper.
  2. Heat 1 tablespoon olive oil in a large Dutch oven or pot over medium-high heat. Brown beef in batches, about 3-4 minutes per side. Remove beef and set aside.
  3. Add remaining 1 tablespoon olive oil to the pot. Sauté diced green bell pepper, yellow onion, and 2 cloves of minced garlic for 5 minutes until softened.
  4. Stir in 1 (8 ounce) can tomato sauce, beef broth, dried oregano, ground cumin, Sazón with achiote, and bay leaf. Return beef to the pot. Bring to a simmer, then reduce heat to low, cover, and cook for 1 hour.
  5. After 1 hour, add cubed potato and sliced carrot to the beef stew. Continue to simmer, covered, for another 30 minutes, or until beef and vegetables are fork-tender. Remove bay leaf.
  6. While the beef stew finishes, prepare the Habichuelas Rosadas: In a separate medium saucepan, heat 1 teaspoon of olive oil (from remaining amount if any, or use fresh). Sauté 0.5 small green bell pepper, 0.25 small yellow onion, and 2 cloves of minced garlic for 3 minutes.
  7. Stir in 1/4 cup tomato sauce, drained pink beans, 1/2 cup water, 1/4 cup chicken broth, and the remaining 1/2 teaspoon salt. Bring to a simmer, then reduce heat to low and cook, stirring occasionally, for 20-25 minutes, or until beans are tender and sauce has thickened. Stir in 1 tablespoon chopped fresh cilantro.
  8. Prepare the white rice: In a medium saucepan, combine 1 1/2 cups long grain white rice, 1 1/2 cups water, and a pinch of salt. Bring to a boil, reduce heat to low, cover, and cook for 20 minutes until water is absorbed and rice is tender. Let stand for 5 minutes.
  9. Serve Carne Guisada hot with fluffy white rice and a generous portion of Habichuelas Rosadas.

Notes

This stew's flavors deepen overnight, making it an excellent candidate for meal prepping. Reheat gently on the stovetop or in the microwave.
