Carne Asada Skewers with Grilled Peppers

  1. If using wooden skewers, soak them in water for at least 30 minutes prior to cooking.
  2. Slice the flank steak against the grain into 1/2-inch thick strips, about 2-3 inches long. In a large bowl, whisk together 1/4 cup olive oil, fresh lime juice, minced garlic, chili powder, ground cumin, dried oregano, cayenne pepper (if using), 1 teaspoon salt, and 1/2 teaspoon ground black pepper. Add the steak strips and toss to coat. Marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.
  3. Preheat your grill to medium-high heat. Thread the marinated steak strips onto skewers, folding them accordion-style. Thread bell pepper pieces and red onion wedges onto separate skewers.
  4. Lightly toss the bell pepper and red onion skewers with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon ground black pepper.
  5. Grill the steak skewers for 2-3 minutes per side for medium-rare, or until desired doneness. Grill the vegetable skewers for 5-7 minutes, turning occasionally, until tender-crisp with some char marks.
  6. Remove from grill and let the steak rest for a few minutes. Garnish with fresh cilantro, if desired, and serve immediately.

Notes

Marinating the steak helps tenderize it and infuse deep flavor. For extra heat, add a pinch more cayenne pepper to the marinade.
