Ingredients
- 2 pound flank steak
- 0.25 cup olive oil
- 0.25 cup fresh lime juice
- 2 clove garlic (minced)
- 2 teaspoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon dried oregano
- 0.25 teaspoon cayenne pepper
- 1.5 teaspoon salt
- 0.75 teaspoon ground black pepper
- 3 bell peppers (large, seeded and cut into 1-inch pieces)
- 1 red onion (cut into wedges)
- 1 tablespoon fresh cilantro (chopped)
- 6 metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes prior to cooking.
- Slice the flank steak against the grain into 1/2-inch thick strips, about 2-3 inches long. In a large bowl, whisk together 1/4 cup olive oil, fresh lime juice, minced garlic, chili powder, ground cumin, dried oregano, cayenne pepper (if using), 1 teaspoon salt, and 1/2 teaspoon ground black pepper. Add the steak strips and toss to coat. Marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.
- Preheat your grill to medium-high heat. Thread the marinated steak strips onto skewers, folding them accordion-style. Thread bell pepper pieces and red onion wedges onto separate skewers.
- Lightly toss the bell pepper and red onion skewers with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon ground black pepper.
- Grill the steak skewers for 2-3 minutes per side for medium-rare, or until desired doneness. Grill the vegetable skewers for 5-7 minutes, turning occasionally, until tender-crisp with some char marks.
- Remove from grill and let the steak rest for a few minutes. Garnish with fresh cilantro, if desired, and serve immediately.
Notes
Marinating the steak helps tenderize it and infuse deep flavor. For extra heat, add a pinch more cayenne pepper to the marinade.
