Ingredients
- 2 pound shrimp (large, peeled, deveined)
- 2 tablespoon olive oil
- 2 yellow onions (medium, diced)
- 2 green bell peppers (diced)
- 4 clove garlic (minced)
- 28 ounce diced tomatoes (undrained)

- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 0.5 teaspoon ground cumin
- 0.25 teaspoon cayenne pepper
- 1 teaspoon salt
- 0.5 teaspoon black pepper (ground)
- 3 cup instant white rice (uncooked)
- 5 cup water
- 1 pound frozen cut okra
- 1 lime (cut into wedges)
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat. Add the diced yellow onions and green bell peppers and cook, stirring occasionally, until softened, about 5-7 minutes. Meanwhile, begin cooking the instant white rice and steaming the okra.
- Stir in the minced garlic and cook for 1 minute until fragrant. Add the diced tomatoes (undrained), chicken broth, tomato paste, dried thyme, ground cumin, cayenne pepper, salt, and black pepper. Bring to a simmer.
- While the creole simmers, prepare the instant white rice. Combine 3 cups of instant white rice and 5 cups of water in a separate saucepan. Bring to a boil, then cover, remove from heat, and let stand for 5 minutes, or according to package directions.
- Steam the frozen cut okra. Place 1 pound of frozen cut okra in a steamer basket over boiling water. Cover and steam for 5-7 minutes, until tender-crisp.
- Add the peeled and deveined shrimp to the simmering creole sauce. Cook for 3-5 minutes, stirring occasionally, until the shrimp turn pink and opaque. Do not overcook.
- Serve the Quick Caribbean Shrimp Creole immediately over the fluffy white rice, with a side of steamed okra. Garnish with fresh cilantro and lime wedges, if desired.
Notes
Adjust the amount of cayenne pepper to suit your preferred spice level. This dish is best enjoyed fresh, but leftovers can be refrigerated for up to 2 days.
