Ingredients
- 2 sweet potatoes (medium, peeled and cubed)
- 2 tablespoon unsalted butter (melted)
- 0.25 cup light brown sugar (packed)
- 0.5 teaspoon ground cinnamon
- 0.25 teaspoon salt
- 1 cup mini marshmallow
- 6 ounce cooked ham (sliced or cubed)
- 2 cup mixed greens
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 0.25 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium mixing bowl, combine the cubed sweet potatoes, melted unsalted butter, light brown sugar, ground cinnamon, and 1/4 teaspoon salt. Toss until the sweet potatoes are evenly coated.
- Transfer the sweet potato mixture to a small baking dish (approximately 8x8 inches) and spread into an even layer.
- Bake for 20 minutes, or until the sweet potatoes are starting to soften.
- While the sweet potatoes are baking, prepare the ham and salad. Cube or slice the cooked ham as desired.
- In a small bowl, whisk together the olive oil, apple cider vinegar, and 1/4 teaspoon black pepper to make the salad dressing.
- Remove the sweet potatoes from the oven. Arrange the cooked ham over the sweet potatoes, then sprinkle the mini marshmallows evenly on top.
- Return the dish to the oven and bake for another 10 minutes, or until the marshmallows are golden brown and puffed and the ham is heated through.
- While the bake finishes, toss the mixed greens with the prepared salad dressing.
- Serve the Candied Sweet Potato & Ham Bake immediately, alongside the fresh green salad.
