  1. Preheat your oven to 375°F (190°C).
  2. In a medium mixing bowl, combine the cubed sweet potatoes, melted unsalted butter, light brown sugar, ground cinnamon, and 1/4 teaspoon salt. Toss until the sweet potatoes are evenly coated.
  3. Transfer the sweet potato mixture to a small baking dish (approximately 8x8 inches) and spread into an even layer.
  4. Bake for 20 minutes, or until the sweet potatoes are starting to soften.
  5. While the sweet potatoes are baking, prepare the ham and salad. Cube or slice the cooked ham as desired.
  6. In a small bowl, whisk together the olive oil, apple cider vinegar, and 1/4 teaspoon black pepper to make the salad dressing.
  7. Remove the sweet potatoes from the oven. Arrange the cooked ham over the sweet potatoes, then sprinkle the mini marshmallows evenly on top.
  8. Return the dish to the oven and bake for another 10 minutes, or until the marshmallows are golden brown and puffed and the ham is heated through.
  9. While the bake finishes, toss the mixed greens with the prepared salad dressing.
