  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add the diced yellow onion to the pot and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 1 minute until fragrant.
  3. Stir in the diced tomatoes, kidney beans, black beans, chicken broth, chili powder, ground cumin, dried oregano, cayenne pepper (if using), kosher salt, and black pepper. Bring the mixture to a simmer.
  4. Reduce heat to low, cover, and simmer for at least 15 minutes to allow the flavors to meld. Stir occasionally.
  5. While the chili simmers, prepare the cornbread according to package directions. You can also prepare a simple green salad by tossing the mixed greens with vinaigrette dressing.
  6. Taste the chili and adjust seasonings as needed. Serve hot with cornbread and a side salad.

Notes

For extra convenience, use pre-chopped onion from the grocery store. This chili also freezes well for future meals.
