- 1 tablespoon olive oil
- 1 pound ground turkey (lean)
- 1 yellow onion (diced)
- 2 clove garlic (minced)
- 14.5 ounce diced tomatoes (undrained)
- 15 ounce kidney beans (rinsed, drained)
- 15 ounce black beans (rinsed, drained)
- 1.5 cup chicken broth
- 2 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon dried oregano
- 0.25 teaspoon cayenne pepper
- 1.5 teaspoon kosher salt
- 0.5 teaspoon black pepper (freshly ground)
- 8.5 ounce cornbread mix
- 1 cup mixed greens
- 2 tablespoon vinaigrette dressing
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add the diced yellow onion to the pot and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 1 minute until fragrant.
- Stir in the diced tomatoes, kidney beans, black beans, chicken broth, chili powder, ground cumin, dried oregano, cayenne pepper (if using), kosher salt, and black pepper. Bring the mixture to a simmer.
- Reduce heat to low, cover, and simmer for at least 15 minutes to allow the flavors to meld. Stir occasionally.
- While the chili simmers, prepare the cornbread according to package directions. You can also prepare a simple green salad by tossing the mixed greens with vinaigrette dressing.
- Taste the chili and adjust seasonings as needed. Serve hot with cornbread and a side salad.
Notes
For extra convenience, use pre-chopped onion from the grocery store. This chili also freezes well for future meals.
