  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the lean ground pork and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add the yellow onion, bell pepper, and minced garlic to the pot. Cook, stirring occasionally, until vegetables are softened, about 5 minutes.
  3. Stir in the diced tomatoes, rinsed and drained pinto beans, low-sodium beef broth, chili powder, ground cumin, dried oregano, salt, and black pepper.
  4. Bring the chili to a simmer, then reduce heat to low, cover, and let cook for at least 5-7 minutes to allow the flavors to meld. Stir occasionally.
