  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sliced smoked sausage and cook for 5-7 minutes, turning occasionally, until lightly browned and heated through. Remove sausage from skillet and set aside.
  2. Add thinly sliced green bell pepper, red bell pepper, and yellow onion to the same skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp. Season with Cajun seasoning, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper.
  3. While vegetables cook, melt 1 tablespoon butter in a separate medium skillet over medium heat. Add shredded cabbage and sauté for 5-7 minutes until tender-crisp. Season with a pinch of salt and pepper.
  4. Return sausage to the skillet with the peppers and onions. Toss to combine and heat through for 1-2 minutes.
  5. Serve Cajun sausage and peppers alongside sautéed cabbage. Garnish with fresh parsley, if desired.

Notes

To adjust spice level, increase or decrease the amount of Cajun seasoning. Smoked chicken or turkey sausage can be used for a lighter option.
