Instructions
- Combine uncooked white rice, 1 cup water, and 1/8 teaspoon salt in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes, or until water is absorbed and rice is tender. Set aside, keeping warm.
- While rice cooks, pat salmon fillets dry and generously season with Cajun seasoning.
- Heat 1 tablespoon olive oil in a large non-stick skillet over medium-high heat. Add green beans and sauté for 5-7 minutes, or until tender-crisp. Stir in minced garlic and 1/8 teaspoon salt and black pepper; cook for 1 minute more. Remove green beans and set aside.
- Add 1 tablespoon butter to the same skillet. Once melted, add the seasoned salmon fillets. Cook for 4-6 minutes per side, depending on thickness, until salmon is flaky and cooked through.
- Serve the Cajun salmon and garlic green beans with the white rice. Squeeze fresh lemon over the salmon before serving, if desired.
