  2. Add diced yellow onion, diced green bell pepper, and diced celery to the skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables begin to soften.
  3. Stir in the minced garlic and Cajun seasoning. Cook for 1 minute until fragrant.
  4. Pour in the can of diced tomatoes (undrained) and low-sodium chicken broth. Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 10 minutes to allow flavors to meld.
  5. While the beef mixture simmers, cook the frozen cauliflower rice according to package directions, typically microwaving or sautéing for 5-7 minutes.
  6. Serve the Cajun ground beef mixture directly over the cooked cauliflower rice. Garnish with fresh parsley, if desired.

Notes

Adjust Cajun seasoning to your preferred spice level. If you prefer more liquid, add an extra 1/4 cup chicken broth. The parsley is optional for garnish.
