Ingredients
- 1 tablespoon olive oil
- 1 pound chicken breast (diced)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 yellow onion (chopped)
- 2 clove garlic (minced)
- 0.25 cup all-purpose flour
- 2 cup chicken broth
- 1.5 cup milk
- 1 teaspoon dried thyme
- 2 cup brown rice (cooked)
- 1 can cannellini beans (rinsed and drained)
- 4 cup frozen broccoli florets (thawed)
- 1.5 cup shredded sharp cheddar cheese (divided)
Instructions
- Preheat oven to 375°F (190°C).
- Heat 1 tablespoon olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add 1 pound diced chicken breast, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook until browned and mostly cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add 1 chopped yellow onion to the skillet and cook until softened, about 5 minutes. Stir in 2 minced garlic cloves and cook for 1 minute more until fragrant.
- Sprinkle 1/4 cup all-purpose flour over the onion and garlic mixture. Cook for 1 minute, stirring constantly, then gradually whisk in 2 cups chicken broth and 1 1/2 cups milk until smooth and thickened, about 3-5 minutes. Stir in 1 teaspoon dried thyme.
- Remove the skillet from heat. Stir in the cooked chicken, 2 cups cooked brown rice, 1 can rinsed and drained cannellini beans, 4 cups thawed frozen broccoli florets, and 1 cup shredded sharp cheddar cheese until well combined.
- Top the casserole with the remaining 1/2 cup shredded sharp cheddar cheese.
- Bake for 20-25 minutes, or until the casserole is bubbling around the edges and the cheese is melted and golden. Let stand for 5 minutes before serving.
Notes
If you don't have an oven-safe skillet, transfer the mixture to a 9x13 inch baking dish before baking. You can substitute other beans like great northern beans for the cannellini beans.
