  1. Heat avocado oil in a large heavy-bottomed pot over medium heat; add diced carrots and celery, cooking for 4 minutes until beginning to soften.
  2. Add rinsed green lentils, fresh thyme sprigs, ground black pepper, kosher salt, and 5 cups of water.
  3. Bring the pot to a boil, reduce heat to low, cover, and simmer for 20 minutes until the lentils are tender but still hold their shape.
  4. While lentils simmer, place broccoli florets in a steamer basket over boiling water and steam for 6 minutes until tender-crisp.
  5. Remove thyme stems from the lentil pot, stir in fresh lemon juice, and ladle into warm bowls alongside the steamed broccoli.

Notes

Green Puy lentils hold their shape beautifully during simmering and do not turn mushy.
