Instructions
- In a pot, combine low-sodium chicken broth, grated fresh ginger, smashed garlic, 1/8 tsp salt, and half the sliced green onions. Simmer over medium heat.
- Add chicken breasts, lower heat to low, cover, and gently poach for 12-14 minutes until chicken reaches 165°F.
- Remove chicken to a board to rest for 3 minutes, then slice thinly.
- Add broccoli florets directly to the simmering ginger broth; cook for 3-4 minutes until bright green and tender, then remove with a slotted spoon.
- Divide broccoli into bowls, top with sliced poached chicken breast, drizzle with toasted sesame oil, and sprinkle remaining 1/8 tsp salt.
- Garnish with remaining green onions and sesame seeds before serving.
