Instructions

  1. Combine basmati rice, 3 cups water, and 1/2 teaspoon salt in a medium pot. Bring to a boil, reduce heat to low, cover, and cook for 15 minutes. Remove from heat and stir in 2 tablespoons of fresh lemon juice and chopped fresh parsley.
  2. In a medium bowl, combine ground turkey, dried thyme, 1/4 teaspoon black pepper, and 1/4 teaspoon salt. Form the mixture into 8 oval patties or logs.
  3. Line a baking sheet with foil and brush with avocado oil. Place turkey patties on the sheet and broil on high 6 inches from the heat source for 5 minutes per side, until lightly browned and cooked through to 165 degrees F.
  4. Stir together lactose-free Greek yogurt, grated English cucumber, fresh dill, remaining 2 tablespoons lemon juice, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon black pepper in a small bowl to create the tzatziki sauce.
  5. Serve the broiled turkey patties hot over the warm lemon parsley rice with generous dollops of cool cucumber tzatziki on the side.

Notes

Ensure cucumber is thoroughly squeezed in a clean kitchen towel to keep the tzatziki thick and creamy.
