Broiled Cod with Herbed Broccoli and Brown Rice

  1. Preheat the oven broiler to high and line a rimmed baking sheet with foil. Place cod fillets on the sheet.
  2. In a small bowl, whisk together olive oil, lemon juice, dried oregano, black pepper, and 1/4 teaspoon of the salt. Brush evenly over both sides of the cod fillets.
  3. Broil cod 5 to 6 inches from heat source for 7 to 9 minutes, until fish is opaque throughout, reaches an internal temperature of 145 degrees F, and flakes easily with a fork.
  4. While cod broils, steam broccoli florets in a covered pot with 1 inch of boiling water for 5 minutes until tender-crisp. Drain and toss with remaining 1/4 teaspoon salt and chopped fresh parsley.
  5. Heat pre-cooked brown rice pouches according to package directions (about 90 seconds per pouch in microwave).
  6. Plate each portion of broiled cod over warm brown rice with a generous side of herbed broccoli and fresh lemon wedges.

Notes

Using microwavable whole grain pouches keeps the total cook time under 20 minutes without sacrificing whole-food nutrition.
