Bright Lemon-Herb Chickpeas with Quinoa

  1. Prepare the quinoa according to package directions, if not already cooked. Aim for 1 cup of cooked quinoa for two servings.
  2. Heat olive oil in a medium skillet over medium heat. Add diced red onion and cook for 3-4 minutes until softened. Add minced garlic and diced red bell pepper, and cook for another 2-3 minutes.
  3. Add the rinsed and drained chickpeas to the skillet. Cook for 3-5 minutes, stirring occasionally, until heated through. Gently mash about 1/4 of the chickpeas with the back of a spoon for a creamier texture, if desired.
  4. Remove the skillet from heat. Stir in the chopped fresh parsley, chopped fresh mint, fresh lemon juice, salt, and black pepper. Taste and adjust seasonings.
  5. To serve, divide the mixed salad greens between two bowls. Top each with 1/2 cup of cooked quinoa and then generously spoon the lemon-herb chickpea mixture over the top.

Notes

You can prep the quinoa ahead of time to make this meal even quicker. A sprinkle of nutritional yeast can add a cheesy flavor without dairy.
