Ingredients
- 1 can chickpeas (rinsed, drained)
- 1 tablespoon olive oil
- 0.5 red onion (finely diced)
- 1 clove garlic (minced)
- 0.5 red bell pepper (finely diced)
- 0.25 cup fresh parsley (chopped)
- 2 tablespoon fresh mint (chopped)
- 2 tablespoon fresh lemon juice
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper
- 1 cup quinoa (cooked)
- 2 cup mixed salad greens
Instructions
- Prepare the quinoa according to package directions, if not already cooked. Aim for 1 cup of cooked quinoa for two servings.
- Heat olive oil in a medium skillet over medium heat. Add diced red onion and cook for 3-4 minutes until softened. Add minced garlic and diced red bell pepper, and cook for another 2-3 minutes.
- Add the rinsed and drained chickpeas to the skillet. Cook for 3-5 minutes, stirring occasionally, until heated through. Gently mash about 1/4 of the chickpeas with the back of a spoon for a creamier texture, if desired.
- Remove the skillet from heat. Stir in the chopped fresh parsley, chopped fresh mint, fresh lemon juice, salt, and black pepper. Taste and adjust seasonings.
- To serve, divide the mixed salad greens between two bowls. Top each with 1/2 cup of cooked quinoa and then generously spoon the lemon-herb chickpea mixture over the top.
Notes
You can prep the quinoa ahead of time to make this meal even quicker. A sprinkle of nutritional yeast can add a cheesy flavor without dairy.
