  1. Start cooking brown rice according to package directions, or use pre-cooked brown rice. Keep warm.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and chopped yellow onion. Cook, breaking up the beef, until browned and onion is softened, about 8-10 minutes. Drain any excess fat.
  3. Stir in minced garlic, chopped red bell pepper, and chopped green bell pepper. Cook for 5 minutes until peppers are slightly tender.
  4. Add rinsed and drained black beans, beef broth, tomato paste, ground cumin, dried oregano, salt, and black pepper. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until sauce slightly thickens.
  5. Stir in chopped fresh cilantro and remove from heat.
  6. Prepare quick slaw: In a medium bowl, combine shredded green cabbage, 1/4 cup red wine vinegar, and 1 tablespoon olive oil. Toss well to combine.
  7. Serve the beef and bean skillet over cooked brown rice, with a side of the cabbage slaw.
