Ingredients
- 2 tablespoon olive oil
- 1 pound ground beef (85/15 or 90/10 lean)
- 1 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- 15 ounce black beans (rinsed and drained)
- 0.5 cup beef broth
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 0.5 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 cup fresh cilantro (chopped)
- 2 cup brown rice (cooked)
- 3 cup green cabbage (shredded)
- 0.25 cup red wine vinegar
Instructions
- Start cooking brown rice according to package directions, or use pre-cooked brown rice. Keep warm.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and chopped yellow onion. Cook, breaking up the beef, until browned and onion is softened, about 8-10 minutes. Drain any excess fat.
- Stir in minced garlic, chopped red bell pepper, and chopped green bell pepper. Cook for 5 minutes until peppers are slightly tender.
- Add rinsed and drained black beans, beef broth, tomato paste, ground cumin, dried oregano, salt, and black pepper. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until sauce slightly thickens.
- Stir in chopped fresh cilantro and remove from heat.
- Prepare quick slaw: In a medium bowl, combine shredded green cabbage, 1/4 cup red wine vinegar, and 1 tablespoon olive oil. Toss well to combine.
- Serve the beef and bean skillet over cooked brown rice, with a side of the cabbage slaw.
