Ingredients
- 1 tablespoon olive oil
- 1.5 pound ground beef (lean)
- 1 teaspoon salt (divided)
- 0.5 teaspoon black pepper (divided)
- 1 yellow onion (medium, diced)
- 3 clove garlic (minced)
- 1 red bell pepper (cored and diced)
- 1 green bell pepper (cored and diced)
- 1 can diced tomatoes (undrained)
- 1 teaspoon dried oregano
- 0.25 cup fresh cilantro (chopped)
- 1 package yucca fries (frozen)
Instructions
- Preheat your air fryer to 400°F (200°C) according to manufacturer's instructions. Arrange the 1 package frozen yucca fries in a single layer in the air fryer basket. Cook for 15-20 minutes, shaking the basket halfway through, until golden brown and crispy.
- While the yucca fries cook, heat 1 tablespoon olive oil in a large skillet or pot over medium-high heat. Add the 1 and 1/2 pounds ground beef and break it apart with a spoon. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook until browned, about 5-7 minutes. Drain any excess grease.
- Add the diced yellow onion, minced garlic, diced red bell pepper, and diced green bell pepper to the skillet. Cook, stirring occasionally, until vegetables begin to soften, about 5 minutes.
- Stir in the 1 can undrained diced tomatoes and 1 teaspoon dried oregano. Bring to a simmer, then reduce heat to low and cook for 3-5 minutes to allow flavors to meld.
- Season the beef skillet with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper, or to taste.
- Serve the Brazilian beef and peppers skillet hot with the crispy yucca fries. Garnish with chopped fresh cilantro, if desired.
Notes
If you don't have an air fryer, you can bake the yucca fries in the oven at 425°F (220°C) for 20-25 minutes, flipping halfway, until crispy.
