- 0.75 cup water
- 2 tablespoon fresh cilantro (finely chopped, for garnish)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Add 1 1/2 pounds lean ground turkey and cook for 6 minutes, breaking it into small crumbles until no longer pink and reaching an internal temperature of 165°F.
- Stir in the 1 tablespoon ground cumin, 1 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper, coating the meat thoroughly for 1 minute.
- Add the diced russet potatoes, peeled zucchini, and 3/4 cup water to the skillet. Bring to a gentle boil.
- Reduce heat to medium-low, cover with a tight lid, and simmer for 15 minutes until potatoes and zucchini are fork-tender and liquid has reduced to a light glaze.
- Garnish with 2 tablespoons chopped fresh cilantro before serving.
