Braised Smoky Seitan & Plantain Mash

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the chopped yellow onion and cook until softened, about 5 minutes. Stir in the minced garlic for 1 minute until fragrant.
  2. Transfer the sautéed onion and garlic to the slow cooker. Add the cut seitan, crushed tomatoes, vegetable broth, apple cider vinegar, smoked paprika, ground cumin, salt, and black pepper. Stir to combine.
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the seitan is tender and the sauce has thickened.
  4. About 30 minutes before serving, place the peeled and chopped ripe plantains in a pot of cold water. Bring to a boil and cook for 15-20 minutes, or until very tender. Drain thoroughly.
  5. Mash the cooked plantains with plant-based milk, vegan butter, salt, and black pepper until smooth and creamy.
  6. Serve the braised smoky seitan over the plantain mash, garnished with fresh cilantro if desired.

Notes

The seitan will become even more flavorful the next day. Reheat gently in the microwave or on the stovetop.
