Braised Beef and Vegetable Bake

  1. Preheat oven to 350°F. Heat 1 tablespoon olive oil in an oven-safe Dutch oven or large pot over medium-high heat. Brown 1 pound beef stew meat on all sides, about 5-7 minutes. Remove beef and set aside.
  2. Add 1/2 cup finely diced yellow onion to the pot and cook until softened, about 3-4 minutes. Stir in 2 cloves minced garlic and cook for 1 minute more.
  3. Return beef to the pot. Stir in 1 cup gluten-free beef broth, 1 tablespoon gluten-free tomato paste, 1 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add 2 medium peeled and quartered red potatoes and 2 medium peeled and cut carrots.
  4. Bring to a simmer, then cover the pot and transfer to the preheated oven. Bake for 40-50 minutes, or until beef and vegetables are very tender. (Cooking time can be adjusted for softer results, if preferred).
  5. Remove from oven and let stand for 5 minutes before serving. Serve hot.

Notes

For best results, ensure all vegetables are cut to a similar size for even cooking. This dish can also be cooked in a slow cooker on low for 6-8 hours or high for 3-4 hours after browning the beef.
