Bolognese Zucchini Boats

  1. Preheat oven to 400°F (200°C). Scoop out the flesh from the zucchini halves, leaving a 1/4-inch border. Roughly chop the scooped zucchini flesh and set aside.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook for 5-7 minutes until browned, breaking it apart with a spoon. Drain any excess fat. Add chopped yellow onion and cook for 3-4 minutes until softened.
  3. Stir in minced garlic, reserved chopped zucchini flesh, diced tomatoes (undrained), chicken broth, dried basil, dried oregano, salt, and black pepper. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly.
  4. Place the zucchini halves on a baking sheet. Fill each zucchini boat generously with the beef Bolognese sauce. Sprinkle with grated Parmesan cheese.
  5. Bake for 15-20 minutes, or until the zucchini is tender-crisp and the cheese is melted and lightly golden. Serve immediately.

Notes

You can prep the zucchini and make the sauce ahead of time, then just assemble and bake when ready to eat.
