Ingredients
- 0.33 cup chia seeds
- 1 cup almond milk (unsweetened)
- 1.5 cup vanilla Greek yogurt
- 1 teaspoon lemon zest (freshly grated)
- 1 tablespoon lemon juice (freshly squeezed)
- 2 tablespoon honey
- 1.5 cup blueberries (fresh)
- 2 tablespoon sliced almonds (toasted)
Instructions
- In a medium bowl, whisk together 1/3 cup chia seeds, 1 cup almond milk, 1 1/2 cups vanilla Greek yogurt, 1 teaspoon lemon zest, 1 tablespoon lemon juice, and 2 tablespoons honey until combined.
- Let the mixture sit for 10 minutes at room temperature, then give it a thorough whisk to ensure seeds are evenly suspended.
- In three glasses or jars, layer half of the fresh blueberries on the bottom, pour the chia pudding over the berries, and top with the remaining blueberries.
- Cover and chill for at least 4 hours. Scatter 2 tablespoons toasted sliced almonds on top right before eating.
Notes
For maximum crunch, keep the toasted almonds in a small baggie and sprinkle on just before serving.
