Ingredients
- 0.75 cup blue cornmeal
- 0.25 teaspoon salt
- 1 cup water (boiling)
- 0.5 cup milk
- 2 tablespoon margarine (melted)
- 1 egg
- 0.75 cup flour
- 2 teaspoon baking powder
- 1 cooking spray
- 1 tablespoon light syrup
Instructions
- In a large bowl, mix the blue cornmeal and salt.
- Stir in the boiling water until the ingredients are wet.
- Cover and let stand for 3 minutes.
- In a separate bowl, mix the milk, melted margarine, and egg.
- Add to the cornmeal mixture.
- Add flour and baking powder to the bowl and mix until combined.
- Heat a large skillet over medium heat and spray with cooking spray.
- Spoon 1/4 cup of the batter on the skillet.
- When bubbles appear, flip, and cook the other side until golden brown.
- Serve with syrup, honey, yogurt, or fresh fruit if desired.
