Ingredients
- 1.5 pound beef top sirloin steak (cut into 1/2-inch strips)
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon black pepper (freshly ground)
- 1.25 teaspoon salt
- 2 tablespoon olive oil
- 2 pound sweet potato (peeled, diced into 1/2-inch cubes)
- 2 tablespoon unsalted butter
- 12 ounce green beans (trimmed)
Instructions
- Place diced sweet potatoes in a medium pot, cover with water, bring to a boil over high heat, and cook for 10 minutes until fork-tender. Drain well, then mash with unsalted butter and 1/2 teaspoon of the salt.
- Meanwhile, place trimmed green beans in a microwave steamer or saucepan with 2 tablespoons water and steam for 4 minutes until crisp-tender; season with 1/4 teaspoon of the salt.
- In a bowl, combine smoked paprika, garlic powder, dried thyme, black pepper, and 1/2 teaspoon of the salt. Toss the beef top sirloin steak strips thoroughly in the seasoning mixture.
- Heat olive oil in a large cast-iron skillet over high heat until shimmering. Add beef strips in a single layer and sear without moving for 2 minutes, then flip and cook for 1 to 2 minutes more until deeply browned and medium-rare (internal temperature 135°F).
- Plate the sweet potato mash alongside steamed green beans and top with the blackened sirloin strips, drizzling any pan juices over the steak.
