  1. Melt 1 tablespoon butter in a small saucepan over medium heat. Add minced garlic and cook for 1 minute until fragrant. Add 1 cup white rice and stir to coat. Pour in chicken broth, bring to a boil, cover, reduce heat to low, and cook for 15 minutes.
  2. In a small bowl, mix paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne pepper, and 1/2 teaspoon salt to create blackening spice.
  3. Heat olive oil in a skillet over medium heat. Add yellow onion and red bell pepper, sautéing for 4 minutes until soft. Stir in yellow corn kernels, remaining 1/2 teaspoon salt, and heavy cream. Simmer for 5 minutes until creamy, then keep warm.
  4. Brush redfish fillets with remaining 1 tablespoon melted butter and coat generously on both sides with the blackening spice mixture.
  5. Heat a heavy cast-iron skillet over high heat until smoking hot. Place fish fillets in the dry hot skillet and sear for 3 to 4 minutes per side until charred and cooked through.
  6. Serve blackened redfish alongside garlic rice and warm corn maque choux.
