Ingredients
- 0.75 pound chicken breast (boneless, skinless)
- 1.5 tablespoon blackening seasoning
- 4 tablespoon olive oil
- 3 ounce mixed greens
- 0.5 cup cherry tomatoes (halved)
- 0.25 cucumber (sliced)
- 0.13 red onion (small, thinly sliced)
- 1.5 tablespoon white wine vinegar
- 0.5 teaspoon Dijon mustard
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Pat chicken breast dry with paper towels. Rub liberally with blackening seasoning, ensuring both sides are coated.
- Heat 1 tablespoon olive oil in a heavy-bottomed skillet (preferably cast iron) over medium-high heat until just smoking.
- Carefully place chicken breasts in the hot skillet. Cook for 5-7 minutes per side, or until chicken is deeply browned and cooked through (internal temperature reaches 165°F). Remove from skillet and let rest for 5 minutes before slicing.
- While chicken cooks and rests, prepare the salad: In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
- In a small bowl, whisk together 3 tablespoons olive oil, white wine vinegar, Dijon mustard, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to create the dressing.
- Drizzle dressing over the salad and toss gently to coat.
- Slice blackened chicken and serve immediately alongside the simple green salad.
Notes
Ensure your skillet is very hot for a proper blackened crust. Adjust blackening seasoning to your spice preference.
