  1. Pat chicken breast dry with paper towels. Rub liberally with blackening seasoning, ensuring both sides are coated.
  2. Heat 1 tablespoon olive oil in a heavy-bottomed skillet (preferably cast iron) over medium-high heat until just smoking.
  3. Carefully place chicken breasts in the hot skillet. Cook for 5-7 minutes per side, or until chicken is deeply browned and cooked through (internal temperature reaches 165°F). Remove from skillet and let rest for 5 minutes before slicing.
  4. While chicken cooks and rests, prepare the salad: In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  5. In a small bowl, whisk together 3 tablespoons olive oil, white wine vinegar, Dijon mustard, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to create the dressing.
  6. Drizzle dressing over the salad and toss gently to coat.
  7. Slice blackened chicken and serve immediately alongside the simple green salad.
