  1. Heat 1 tablespoon of olive oil in a medium skillet over medium heat. Add the chopped yellow onion and cook until softened, about 3-4 minutes.
  2. Stir in the minced garlic and cook for 30 seconds until fragrant.
  3. Add the rinsed black beans, chili powder, ground cumin, and smoked paprika to the skillet. Stir to combine.
  4. Pour in 1/4 cup of vegetable broth or water. Mash about half of the beans with the back of a fork to create a slightly chunky texture. Simmer for 5-7 minutes, stirring occasionally, until the sauce thickens. Season with salt and black pepper to taste.
  5. While the bean filling simmers, warm the corn tortillas according to package directions (microwave, oven, or skillet).
  6. Assemble the tacos: spoon the black bean filling into the warm corn tortillas, top with shredded lettuce, and a dollop of store-bought salsa. Garnish with chopped fresh cilantro if desired.
  7. Serve immediately with tortilla chips on the side.

Notes

For extra spice, add a pinch of red pepper flakes to the bean filling. If you like, serve with a side of guacamole or a squeeze of lime juice.
