  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chopped red onion and cook for 3-4 minutes until softened. Add the minced garlic cloves and cook for 1 minute more.
  2. Stir in the 30 ounces of rinsed black beans, 1 teaspoon of ground cumin, 1/2 teaspoon of chili powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for 5-7 minutes, stirring occasionally, until the beans are heated through and slightly saucy.
  3. While beans cook, warm the 12 flour tortillas according to package directions (microwave, oven, or skillet).
  4. Assemble tacos: Spoon the black bean mixture into warm tortillas. Top with 1 1/2 cups of shredded Monterey Jack cheese, 1 cup of salsa, 1 diced avocado, and 1/4 cup of fresh chopped cilantro.
  5. Serve immediately with a side of 9 ounces of tortilla chips.

Notes

For a little extra kick, add a dash of hot sauce to the black beans. Leftover components can be stored separately and reheated to maintain freshness.
