  1. Heat olive oil in a large skillet over medium heat. Add yellow onion and cook for 3-4 minutes until softened.
  2. Stir in garlic and cook for 1 minute more until fragrant.
  3. Add rinsed and drained black beans, chili powder, smoked paprika, salt, and water to the skillet. Mash about half of the beans with a fork or potato masher to create a creamier texture. Simmer for 5-7 minutes, stirring occasionally, until heated through and slightly thickened.
  4. While the beans are simmering, warm the flour tortillas according to package directions (microwave, dry skillet, or oven).
  5. Assemble the tacos: Fill warm tortillas with the black bean mixture. Top with shredded cheddar cheese, shredded lettuce, fresh salsa, and sliced avocado.
  6. Garnish with fresh cilantro, if desired, and serve immediately.

Notes

To keep tortillas from getting soggy, assemble tacos just before serving. Any leftover black bean mixture can be used in burritos or as a side dish.
