Instructions

  1. Cook white rice: In a medium pot, combine 1 cup white rice and 2 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and rice is tender. Once cooked, stir in 1/4 cup chopped fresh cilantro and 1 tablespoon lime juice. Keep warm.
  2. While rice cooks, prepare the black bean mixture. In a medium bowl, combine rinsed and drained black beans, thawed frozen corn, diced red bell pepper, and halved grape tomatoes.
  3. In a small bowl, whisk together 2 tablespoons olive oil, 1 tablespoon lime juice, 1/2 teaspoon chili powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Pour over the black bean mixture and toss to coat.
  4. To assemble, divide the cilantro-lime rice among four serving bowls. Top each with a generous portion of the black bean and corn mixture. Sprinkle with shredded cheddar cheese and, if desired, diced avocado.
  5. Serve immediately and enjoy the vibrant flavors.

Notes

For even quicker preparation, use pre-cooked microwaveable rice pouches. Add a dash of hot sauce if you prefer a spicier kick.
