Instructions
- Cook white rice: In a medium pot, combine 1 cup white rice and 2 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and rice is tender. Once cooked, stir in 1/4 cup chopped fresh cilantro and 1 tablespoon lime juice. Keep warm.
- While rice cooks, prepare the black bean mixture. In a medium bowl, combine rinsed and drained black beans, thawed frozen corn, diced red bell pepper, and halved grape tomatoes.
- In a small bowl, whisk together 2 tablespoons olive oil, 1 tablespoon lime juice, 1/2 teaspoon chili powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Pour over the black bean mixture and toss to coat.
- To assemble, divide the cilantro-lime rice among four serving bowls. Top each with a generous portion of the black bean and corn mixture. Sprinkle with shredded cheddar cheese and, if desired, diced avocado.
- Serve immediately and enjoy the vibrant flavors.
Notes
