Ingredients
- 1 can black beans (rinsed and drained)
- 0.25 cup yellow onion (finely diced)
- 1 clove garlic (minced)
- 0.5 teaspoon ground cumin
- 0.5 teaspoon chili powder
- 0.25 teaspoon garlic powder
- 1 tablespoon gluten-free oat flour
- 2 tablespoon fresh cilantro (chopped)
- 1 tablespoon olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 4 corn tortillas
- 1 avocado (sliced)
- 1 cup shredded lettuce
Instructions
- In a medium bowl, mash the 1 can rinsed and drained black beans with a fork or potato masher, leaving some whole for texture.
- Add 1/4 cup finely diced yellow onion, 1 clove minced garlic, 1/2 teaspoon ground cumin, 1/2 teaspoon chili powder, 1/4 teaspoon garlic powder, 1 tablespoon gluten-free oat flour, 2 tablespoons chopped fresh cilantro, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to the mashed beans. Mix until well combined.

- Serve the black bean patties in the warm corn tortillas, topped with 1 each sliced avocado and 1 cup shredded lettuce.
