  1. In a medium bowl, mash the 1 can rinsed and drained black beans with a fork or potato masher, leaving some whole for texture.
  2. Add 1/4 cup finely diced yellow onion, 1 clove minced garlic, 1/2 teaspoon ground cumin, 1/2 teaspoon chili powder, 1/4 teaspoon garlic powder, 1 tablespoon gluten-free oat flour, 2 tablespoons chopped fresh cilantro, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to the mashed beans. Mix until well combined.
  3. Divide the mixture into 4 equal portions and form into patties.
  4. Heat 1 tablespoon olive oil in a large skillet over medium heat. Carefully place the patties in the skillet and cook for 5 to 7 minutes per side, until golden brown and heated through.
  5. While patties cook, warm 4 corn tortillas according to package directions (microwave or skillet).
  6. Serve the black bean patties in the warm corn tortillas, topped with 1 each sliced avocado and 1 cup shredded lettuce.

Notes

You can add a dollop of your favorite salsa or a squeeze of lime juice for extra flavor.
