Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced yellow onion and cook until softened, about 3-5 minutes.
- Stir in the minced garlic, ground cumin, and smoked paprika. Cook for 1 minute more, until fragrant.
- Add the rinsed and drained black beans, diced tomatoes (undrained), frozen corn, and vegetable broth to the skillet. Bring to a simmer.
- Reduce heat to low, cover, and cook for 10 minutes to allow flavors to meld. Season with salt and black pepper to taste.
- While the skillet simmers, prepare the slaw. In a medium bowl, combine the thinly sliced green cabbage, apple cider vinegar, and 1 tablespoon of olive oil. Season with a pinch of salt and pepper and toss well.
