  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced yellow onion and cook until softened, about 3-5 minutes.
  2. Stir in the minced garlic, ground cumin, and smoked paprika. Cook for 1 minute more, until fragrant.
  3. Add the rinsed and drained black beans, diced tomatoes (undrained), frozen corn, and vegetable broth to the skillet. Bring to a simmer.
  4. Reduce heat to low, cover, and cook for 10 minutes to allow flavors to meld. Season with salt and black pepper to taste.
  5. While the skillet simmers, prepare the slaw. In a medium bowl, combine the thinly sliced green cabbage, apple cider vinegar, and 1 tablespoon of olive oil. Season with a pinch of salt and pepper and toss well.
