- 1 tablespoon olive oil
- 1 yellow onion (small, diced)
- 2 clove garlic (minced)
- 1 teaspoon ground cumin
- 0.5 teaspoon mild chili powder
- 30 ounce black beans (rinsed and drained)
- 1 cup frozen corn
- 0.5 cup vegetable broth
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 package pre-cooked brown rice
- 2 avocados (diced)
- 1 cup cherry tomatoes (halved)
- 0.25 cup fresh cilantro (chopped)
- 2 tablespoon fresh lime juice
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced yellow onion and sauté until softened, about 3-4 minutes.
- Stir in the minced garlic, ground cumin, and mild chili powder. Cook for 1 minute until fragrant.
- Add the rinsed black beans, frozen corn, and vegetable broth. Bring to a simmer and cook for 5-7 minutes, until heated through and slightly thickened. Season with salt and black pepper.
- While the beans cook, prepare the pre-cooked brown rice according to package directions (usually 90 seconds in microwave).
- In a small bowl, gently combine the diced avocados, halved cherry tomatoes, chopped fresh cilantro, and fresh lime juice.
- Divide the cooked brown rice among 5 bowls. Top with the warm black bean and corn mixture, then spoon the avocado-tomato topping over each bowl.
Notes
For meal prep, store the warm bean mixture and rice separately from the fresh avocado-tomato topping and lime dressing. Combine just before serving.
