  1. Heat olive oil in a large skillet over medium heat. Add the diced yellow onion and sauté until softened, about 3-4 minutes.
  2. Stir in the minced garlic, ground cumin, and mild chili powder. Cook for 1 minute until fragrant.
  3. Add the rinsed black beans, frozen corn, and vegetable broth. Bring to a simmer and cook for 5-7 minutes, until heated through and slightly thickened. Season with salt and black pepper.
  4. While the beans cook, prepare the pre-cooked brown rice according to package directions (usually 90 seconds in microwave).
  5. In a small bowl, gently combine the diced avocados, halved cherry tomatoes, chopped fresh cilantro, and fresh lime juice.
  6. Divide the cooked brown rice among 5 bowls. Top with the warm black bean and corn mixture, then spoon the avocado-tomato topping over each bowl.

Notes

For meal prep, store the warm bean mixture and rice separately from the fresh avocado-tomato topping and lime dressing. Combine just before serving.
