Ingredients
- 1 can black beans (rinsed and drained)
- 1 can corn (drained)
- 1 red bell pepper (finely diced)
- 0.5 cup fresh cilantro (chopped)
- 2 tablespoon olive oil
- 2 tablespoon lime juice (freshly squeezed)
- 0.5 teaspoon ground cumin
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper (freshly ground)
- 2 avocados (sliced or diced)
- 8 whole wheat tortillas
- 1 package tortilla chips
Instructions
- In a large bowl, combine the rinsed and drained black beans, drained corn, finely diced red bell pepper, and chopped fresh cilantro.
- In a small bowl, whisk together the olive oil, fresh lime juice, ground cumin, salt, and black pepper to make the dressing.
- Pour the dressing over the black bean mixture and stir well to combine. Gently fold in the sliced or diced avocados.
- Warm the whole wheat tortillas according to package directions (microwave for 15-30 seconds, or heat gently in a dry skillet).
- Fill each warm tortilla with a generous amount of the black bean and corn mixture. Serve immediately with tortilla chips on the side.
Notes
You can add a dollop of Greek yogurt or a sprinkle of cheese for an extra creamy touch, if desired. For meal prep, store the black bean mixture and avocado separately, assembling the wraps just before serving to prevent sogginess.
