Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef (85/15 or 90/10 lean)
- 1 yellow onion (chopped)
- 1 red bell pepper (chopped)
- 2 clove garlic (minced)
- 1 can crushed tomatoes
- 2 can black beans (rinsed and drained)
- 1.5 cup chicken broth
- 2 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper
- 1 cup quick-cook brown rice (uncooked)
- 4 ounce corn tortilla chips
- 0.25 cup fresh cilantro (chopped, for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add the chopped yellow onion and red bell pepper to the pot and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
- Stir in the crushed tomatoes, black beans, chicken broth, chili powder, ground cumin, smoked paprika, 3/4 teaspoon salt, and 1/4 teaspoon black pepper. Bring the chili to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, allowing flavors to meld.
- While the chili simmers, prepare the quick-cook brown rice according to package directions.
- Serve the hearty black bean chili hot, topped with chopped fresh cilantro if desired, alongside quick-cook brown rice and corn tortilla chips.
Notes
For a little extra heat, add a pinch of red pepper flakes with the spices. Leftovers are fantastic and can be stored in the refrigerator for up to 4 days.
