Black Bean Chili

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Add the chopped yellow onion and red bell pepper to the pot and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the crushed tomatoes, black beans, chicken broth, chili powder, ground cumin, smoked paprika, 3/4 teaspoon salt, and 1/4 teaspoon black pepper. Bring the chili to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, allowing flavors to meld.
  4. While the chili simmers, prepare the quick-cook brown rice according to package directions.
  5. Serve the hearty black bean chili hot, topped with chopped fresh cilantro if desired, alongside quick-cook brown rice and corn tortilla chips.

Notes

For a little extra heat, add a pinch of red pepper flakes with the spices. Leftovers are fantastic and can be stored in the refrigerator for up to 4 days.
